PASSION FRUIT CUPCAKE WITH MERINGUE FROSTING

Hey there! Just randomly, I decided to make a passion fruit cupcake. I was suppose to make a calamansi cupcake but then I saw this pile of passion fruits just lying around the kitchen sink. And nobody cares about it. And so I decided to make this one. I got the recipe from this site http://www.taste.com.au/recipes/28366/passionfruit+meringue+cupcakes , but I modify some of it. Here goes my passion fruit cupcake with meringue frosting recipe.

What you will need:

For the cupcake:

1/2 cup unsalted butter, softened
3/4 cup white sugar
11/4 cup all purpose flour
3 eggs
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla extract (essence or flavor will do)
1/3 cup passion fruit

For the meringue:

3 egg whites
1/2 cup white sugar
1 tbsp passion fruit


Step 1: Preheat oven to 160 degrees Celsius. Prepare 12 paper cups for the muffins. ( But this time, I'm using silicon cups which I bought online.)

Step 2: Using an electric mixer, beat butter and sugar until fluffy. Add eggs one at a time. Add in vanilla.

Step 3: In a separate bowl, mix all the dry ingredients. Mix until fully incorporated. Mix the dry ingredients to the egg and butter mixture 1/3 at a time. Finally, add the 1/3 cup passion fruit. Mix for 3 minutes or until fully combined.

Step 4: Spoon mixture into the paper cases. Bake for 20 minutes or until a toothpick inserted comes out clean. Stand in pan for 5 minutes and  let cool.

Step 5: To make the meringue, beat egg whites until stiff peak forms. Add in sugar a tablespoon at a time. Finally, add in the passion fruit puree.

Step 6: Arrange cupcakes in a baking tray and pipe in meringue frosting. Bake for 3-4 minutes or until golden brown. Set aside to cool completely.




And Viola! It's done. These cupcakes looks very tasty. But it doesn't just look tasty, it tastes so delicious too. Those tangy and sweet taste is just mouth watering. Perfect for this cold afternoon, paired with a hot tea. I hope you like this recipe and have fun baking.Til next.
